Abstract
ABSTRACTThe comparative study of the nutritional content of peeled and unpeeled Bambara nut was determined using a standard method (AOAC, 2000). The result of the proximate analysis for the peeled Bambara nut shows that Moisture, Ash, Lipid, Crude protein, Crude fibre and carbohydrate content were 6%±0.10, 4%±0.08, 3.5%±0.11, 4.26%±0.08, 4,5%±0.05, 77.74%±0.56; 25%±0.11, 10%±0.10, 6%±0.10, 9.24%±0.08, 5%±0.16, 44.74%±0.10; 40%±0.10, 11.5%±0.10, 8%±0.08, 4.26%±0.10, 1.5%±0.08, 36.74%±0.10; for Lokoja, Kabba and Okene respectively. For the unpeeled Bambara nut shows that Moisture, Ash, Lipid, Crude protein, Crude fibre and carbohydrate content were:11%±0.11, 15%±0.11, 15%0.12, 1.37%±0.12, 5%±0.08, 42.63%±0.11; 30%±0.11, 15.5%±0.08, 11%±0.11, 19.17%±0.12, 6.5%±0.05, 17.83%±0.11; 45%±0.11, 16%±0.12, 10.5%±0.05, 8.52%±0.10, 3%±0.10 and 16.98%±0.10 for Lokoja, Kabba and Okene respectively. Bambara nut is a complete legume that should be consumed by both adult and children and should be eaten with the membrane without peeling it off.
